If it is just delete it from the list and it won’t automatically startup when you startup and login in to your computer. See if the Epson PowerENGAGE software is listed there. Go to Apple menu > System Preferences > Users & Groups and select the ‘Login Items’ tab. Installing software from the manufacturer usually also installs junk like this Epson PowerENGAGE stuff that is more of a pain than anything else. Whenever you set up a new printer just plug it into your computer or connect to it over Wi-Fi and macOS will download any drivers it requires from the internet and only the actual drivers during the set up process in System Preferences. As a general rule you shouldn’t need to install printer drivers on macOS.
